The Great Shredder – Ok, More Like Grater…

Remember my previous posts on the Tefal Express? Well, if you don’t, or haven’t read about it or watched the demo and challenge video, go check them out here and here. As promised, this is THE post that will give you the chance to win one for yourself!

First, though, I’ll share with you the other great stuff I’ve made thanks to this new gadget. There was the carrot and zucchini bars that I pinned here. Then, I made some carrot & chicken fritters for the kids’ lunch box – it was pretty quick and easy considering I made it that morning itself. I was rushing to pack their lunches that I didn’t take any photos, but I’m happy to share the recipe here:

Carrot & Chicken Fritters

Ingredients

1 carrot (grated)

1 cup self-raising flour

100g (thereabouts) roast chicken slices (they are actually cold cuts) chopped

2/3 cups water

salt & pepper to taste

Method

Mix everything in a bowl, heat your frying pan and add a little bit of oil. Then fry spoonfuls of the mixture, remembering to turn them over once you see bubbles on the surface – much like when you’re making pancakes or picklets. Easy! And you’re done!

To be perfectly honest, the amount of ingredients I use are what I gauged by eye – no specific amount really. That’s always been the way I cook, unless it’s something I have to bake. I’m the “let’s wing it” sort of cook and I think that’s the best method – cooking by instinct! Also, you can replace the carrots with zucchini and the chicken with tuna, or add a small can of creamed corn even – the choice is yours with this easy to follow recipe.
