Making the school lunch box an easier task

I’ve read and heard of others baking lunch box goodies in advance and freezing them to cut down morning school preparation times, but I’ve never actually done it. I have made my kids’ school lunches and snacks on the morning itself, which meant getting up extra early and rushing like a mad woman – stupid, I know. So, last week, I had a choice between cleaning my floors, or doing some baking. Inspired by the Seraphim’s blog Ah, the possiblities! who in turn was inspired by this blog, I decided to do some baking instead. I made two trays of mini quiches and 1 tray of choco berry muffins and froze them afterwards. The next morning, all I had to do was defrost the mini quiches and muffins in the microwave, chop up some cucumbers to go with the mini quiches, put them in the lunch boxes – Vuala! that was their lunch! And the choco berry muffins were for their recess. The best bit about this was – I actually had time to sit down and have some breakfast! Yes, I was indeed amazed. Seeing the amount of time saved, I decided the next morning on to – sleep in for another 10 minutes. Any Mum out there would know how precious 10 minutes can be, so yes, those 10 minutes were indeed bliss!

This week – I only have time to bake some mini white chocolate berry muffins, which would be for their recess and I still have some frozen zucchini and cheese muffins, which I made the middle of last week – phew! Next on the agenda, savoury pastry roll ups with cheese, turkey and carrots – quick and easy.

Just a tip, this is also a great activity to include your kids in when baking their lunches/snacks. You only need about an hourĀ  or two during the weekend. That is, if you’re keen on letting them experiment in the kitchen. That way, they would also look forward to eating what they’ve cooked for themselves.
